Wheat germ is SUCH a fabulous source of vitamin E........another thing you can add to a fruit smoothie would be some Brewers Yeast. One TBSP of that gives you tons of amino acids as well as all your vitamin B's.......good stuff!! Your veggies look yummy!! Try roasting some sweet potatoes, parsnips, carrots and onion in light olive oil with fresh rosemary and garlic. YUMMY!! And oh so good for you. Keep it up JP. :2thumbs:

Did someone say "Sweet Potato"...MMMMMMMM... Thanks :2thumbs:

The wheat germ/corn meal coating did keep some of the juices in while cooking. Little on the bland side of things, but stopped the chicken from burning and held onto some of the juices.

Here was tonights meal :haha: Even the steam/heat could be seen. The sacrifices we make for the Net :haha:



All finished :lol8:

Alison's Summer Salad Packed full of antioxidants:

Bag of Spring Mix
Gorgonzola cheese
Orange slices, cut up into chunks
Blackberries (or any berries work)
Tomato
Honey glazed walnuts

Dressing:
Raspberry vinager
honey
light olive oil
spash of OJ/orange zest


Honey glazed walnuts: Place walnuts on foil, toss in little bit of olive oil and lots of honey. Place in oven or toaster oven and roast them, but don't burn them. They cook QUICK! Immediately remove them from the foil so they don't stick, throw them in a bowl, let them cool.

Dressing:
Mix Rasp vinegar, honey, Olive oil and OJ with a little zest to taste. It should be a light sweet dressing.

Toss everything together, once the walnuts have cooled and YUMMY!! Packed full of antioxidants, vitamin C and good fats (walnuts) and trace minerals (honey).


It's a great salad to have along side of a grilled peice of MEAT. Or K-bobs of some sort. Very filling.

So I get home from work this afternoon and upon opening my front door, my olfactory senses are awakened by the scent of taco meat simmering.
Mmmmmm. Just now how I'm used to taco meat simmering.

My wife had the ol' crock pot slow cooking away on the counter, so I went over and took a peek. It smelled sooooooo delicious that I almost dished up a bowl of the yummy looking concoction inside.

She decided to try out a new recipe, "Crock Pot Chicken Tacos", served atop piping hot Navajo fry bread.

We grated some Mexican blend cheese, whipped up some fresh guacamole, broke out the sour cream, and chopped up some crisp Romaine lettuce to top it off. :slobber: Oh, man. This was a treat.

Check out the photo....This was actually the second one I pounded for dinner. We used the leftover frybread dough to cook up a tasty dessert.

If anyone wants the recipe, lemme know. This one WILL be back on my plate SOON! :2thumbs:

Fathers day dinner I decided to smoke some salmon. My wife also got some crab legs so I thought why not smoke them too. Well I am a noob at smoking and I think I went a little overboard on the woodchips, too much smokiness. The crap legs were actually pretty juicy but I prefer it without the smoke flavor. We also had stuffed crab, popcorn shrimp, and red lobster knock-off cheesy garlic rolls. The rolls were better than at Red Lobster!
The salmon is all ripped up because I already went through it looking for bones.

OK, Jaxx and fellow Bogleyites............ Here's how to make those awesome "Crock Pot Chicken Tacos"!

Ingredients:
2-3 chicken breasts (or you can use 7 or so chicken breast tenders)
1 can chicken broth
1 pkg taco seasoning
1 cup salsa
1 can corn, drained
1 can black beans, drained

Place the above ingredients in the crock pot on high for 3-4 hours on HIGH. Just before serving shred chicken and add:

1 cup sour cream
1/2 cup shredded cheese

Serve over piping hot Navajo fry bread, recipe below! Top with: Grated cheese, lettuce, tomatoes, onions, salsa, avocados/guacamole, or anything else that sounds good.

This stuff is runny, and can be eaten like a soup, so you could try that too.


NAVAJO FRY BREAD RECIPE:

Ingredients:
2 cup unbleached flour
¾ teaspoon salt
2 teaspoon powdered milk
2 teaspoon baking powder
1 cup water
Vegetable oil for frying

Directions:

1. Sift together the flour, salt, powdered milk, and baking powder into a large bowl. Pour the water over the flour mixture all at once and stir the dough with a fork until it starts to form one big clump.

2. Flour your hands. Using your hands, begin to mix the dough, trying to get all the flour into the mixture to form a ball. NOTE: You want to mix this well, but you do NOT want to knead it. Kneading it will make for a heavy Fry Bread when cooked. The inside of the dough ball should still be sticky after it is formed, while the outside will be well floured.

3. Cut the dough into four (4) pieces. Using your floured hands, shape, stretch, pat, and form a disk of about 5 to 7 inches in diameter. NOTE: Don’t worry about it being round. It doesn't need to roll into your mouth!

4. Heat the vegetable oil to about 350 degrees. NOTE: You can check by either dropping a small piece of dough in the hot oil and seeing if it begins to fry, or by dipping the end of a wooden spoon in and seeing if that bubbles. Your oil should be about 1-inch deep in a large cast-iron skillet or other large fryer.

5. Take the formed dough and gently place it into the oil, being careful not to splatter the hot oil. Press down on the dough as it fries so the top is submersed into the hot oil. Fry until brown, and then flip to fry the other side. Each side will take only a minute or so.

Fry Bread can be kept warm in a 200 degree F. oven for up to 1 hour. They refrigerate well and can be reheated in a 350 degree F. oven for 10 to 15 minutes before serving.

Spaghetti (well, actually Angel Hair pasta) with homemade sauce and meatballs

Whenever I have company in town, I always have to make this for everyone. It's good, but it's a half day project! :2thumbs: I find that little kids always gripe about the veggies in the sauce, so I usually cut the pieces of bell pepper and black olives in big chunks - that way they are easily removable, but the flavor is still cooked in the sauce. :nod:
